Tomatoes lovers, this Shakshuka is for you, when I eat it I remember my childhood and the tasty food of my mother. #Shakshuka is a classic north African and Middle eastern meal made of poached egg in a simmering spicy #tomatosauce. It’s made from simple and healthy ingredient, you can keep it vegetarian or add some prawns, merguez or meet balls your options are endless and the result still perfect and so tasty.
This is a well-known meal (of so many countries) and it’s traditionally served straight from the pan at the table. It can be served for brunch, lunch, dinner or as a side with a grilled meat, chicken or fish… Don’t forget the bread!
Ingredients:
o 4 big or 5 medium whole tomatoes, peeled and crushed (Or 1 can diced tomatoes with juice)
o 4 garlic cloves , peeled and finely chopped
o 1 tsp tomato puree
o 1 green chilli pepper (Or ½ bell green pepper), diced
o 5 Tbsp extra virgin olive oil
o 1 tsp harissa (or chilli powder/paprika), to taste you can add more it’s up to you,
o 1+1/2 tsp ground coriander
o Salt and pepper, to taste
o 2 sprigs of parsley, finely chopped
o 2 eggs (1/per)
o 1 potato, washed peeled and chopped into cubes
Instructions:
1 - Heat the olive oil in a large frying pan. Add the chopped potatoes and cook in medium heat for about 10-15 minutes or until they are soft and slightly golden brown, then transfer to a plate;
2 - If you are using a fresh tomatoes, peel and quarter them with a knife, then pulse in a food processor until crushed;
3 - In the same frying pan, add garlic, crushed tomatoes/can diced tomatoes, tomato puree, harissa or chilli powder, ground coriander, season with salt and pepper, pour about half glace of boiled water, cover and let it simmer for about 30 minutes;
4 - Use a large spoon to make 2 medium dips in the sauce, then crack an egg into each dip. Cover the pan and cook over a low heat for 3-5 minutes, or until the eggs are done to your liking;
5 - Garnish with a chopped parsley and serve with a good bread for mopping up the sauce.
